One Minute Hollandaise with a stick blender – perfect for poached eggs!
One minute hollandaise……. what? What happened to whisking forever to incorporate the melted butter. What happened to a split sauce?
One minute hollandaise made with my stick blender, that is what happened! Like so many people I LOVE hollandaise sauce. Sadly I have had so many failed attempts that I have decided to have my fix for hollandaise at restaurants where there are qualified people who can make it. The I saw the recipe for a 1 minute hollandaise made with your stick blender and thought……. that the heck, let me give it a go!
I can now have hollandaise sauce on fish, chicken and my all time favorite poached eggs. There are few meals that compare to poached eggs on sourdough bread with fresh rocket and of course hollandaise.
Before my discovery of the one minute hollandaise recipe, I was always on the lookout for restaurants that serve my favorite breakfast. I was arrogant enough to rate a restaurant on just this one item on their menu, if they mess with my soft poached eggs, or I don’t like their hollandaise, they are no good. Then I found Hemelhuijs and my Poached Eggs with hollandaise dream came true. They serve softly poached eggs on toasted Mosbolletje bread, crispy bacon, fresh rocket and a ladle of silky hollandaise. The sweetness of the mosbolletjie bread, the salty bacon, the bitter rocket and the oozing egg, topped with liquid gold, every bite is just heavenly.
So yesterday morning I found to forgotten hotcross buns leftover from Easter weekend and I had a light bulb moment. Hotcross buns kind of have the same flavor and texture as mosbolletjies……. eureka, I can make my own Hemelhuijs Breakfast with my one minute hollandaise. I was not disappointed, although a visit to Hemelhuijs could never be replaced or replicated, but I can satisfy my cravings for my favorite breakfast more often now!
One Minute Hollandaise with a stick blender
makes 200 ml sauce
1 extra large egg yolk
5 ml white wine vinegar
5 ml water
5 ml Dijon Mustard
125 ml melted butter – melted it must be 125ml, it is about 120 g
Place the egg yolk, water, vinegar and mustard in your stick blender’s jug. Melt the butter in microwave oven. Place your stick blender over the egg yolk and start running the machine. Slowly add the melted butter and voila…. in seconds you have hollandaise. You can season with salt, pepper and maybe tarragon, but to me, it is just perfect.
So for my breakfast, I rejuvenated a hotcross bun, by cutting it in half and toasting and buttering it. Top with fresh rocket from the garden and crispy bacon ( I drizzled some maple syrup over the bacon whilst frying, but that is really optional ). Then poach 2 eggs to perfection and lastly smother all of this with your freshly made one minute hollandaise sauce.
How to poach an egg:
Your eggs must be fresh.
Fill a pot halfway with water and add a tablespoon of vinegar to the water and bring it to a very steady simmer. (the water must not make bubbles)
Slowly break open the egg and tip it into the water, cook for three minutes.
Remove with the egg carefully with a slotted spoon and drain onto kitchen paper.
