To me, there’s little not to love about pesto. It’s an instant flavour bomb that’s hard to beat. I love having a jar in the fridge that I can drizzle over half an avocado for a speedy, healthy snack. My other favourite lunch is quinoa, cooked beetroot, tuna, half an avo, a handful of sprouts and a few toasted sunflower seeds, and then a good drizzle of pesto (usually wolfed down standing at the kitchen counter). It’s fresh and delicious and bursting with life and flavour and it’s hard not to love. Also, it’s just as at home in a giant bowl of pasta (or courgetti), simple and unadorned and lovely.
And by the way, did you know that this humble herb is actually SUPER good for you? Gram for gram, watercress contains more vitamin C than oranges, more calcium than milk, more iron than spinach and more folate than bananas. It is also proven to have cancer-fighting properties.
And of course you can chop chop chop away on a chopping board until you have everything blended nicely together, and I have to say that there are days when I find that extremely satisfying. But when you need a quick fix, and big bang for your buck in terms of flavour and input, then whizzing up a quick pesto in your blender is the way to go.
